Chocolate Muffins

2 c Flour, sifted
1 ts Baking soda
1 1/2 ts Baking powder
6 tb Cocoa
1/4 c Canola oil
3/4 c Skim milk
1/2 c Sugar free jam, barley malt sugar or apple juice concnetrate thawed
2 ts Vanilla extract
2 ea Egg whites

Combine all dry ingredients and mix well. In another bowl mix all wet ingredients well. Pour liquids into solids and mix well. Pour into Pan coated muffin tins and bake in preheated 400~ oven for 15 minutes or until top springs back when pressed. Yield 10 to 12 muffins.
