Zucchini With Potatoes

2 Zucchini;
3 Potatoes;
2 ts Oil;
1 Onion; chopped
1 lg Tomato; diced
1/3 c Water or chicken broth;
2 ts Oregano; chopped
Salt & pepper;

Cut unpeeled potatoes and zucchini into 1/2" pieces. Heat oil in skillet. Add potatoes and stir fry for 1 minute. Pour in water or broth, cover and cook over low heat 4 to 5 minutes. Add onion, zucchini, tomato, oregano and season to taste. Stir and cook until vegetables are tender.
