Tapioca Pudding 1/2 c Minute tapioca
4 c Skim milk
6 tb Sugar twin
2 Egg whites
2 ts Vanilla extract
SEE NOTE in Description to make chocolate tapioca.
Combine all ingredients in medium saucepan. Stir to blend. Let stand 5 minutes. Cook, stirring constantly, over medium heat until mixture comes to a full boil. Pudding thickens as it cools. Remove from heat. Cool 20 minutes. Stir, serve warm or chilled. For chocolate tapioca add 3 tbsp. Hershey's cocoa powder to list of ingredients.
