Eggplant With Tomatoes 2 Thin slices Eggplant (50gm)
2 ts Butter (10gm)
1/4 c Canned tomatoes (50 gm)
1/2 ts Chives, chopped (2gm)
Salt and pepper to taste
Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in a separate pan and pour over eggplant. Sprinkle with chopped chives.
